Showing the timeline for making homemade wine and doing a wine tasting of my first batch, which was made using store bought bottled grape juice. this wine was made without the use of an airlock, special containers, or equipment, and plain old quick rise bread yeast. No special ingredients or equipment were used in the making of this grape wine. Also showing the progress of the hard apple cider as well. With this batch I used a 5 gallon glass carboy and 3 piece airlock, but still am using the same Red Star quick rise bread yeast.     5 percent booze is stronger than grocery store beer ! A sweet apple jack at about 5 percent should be pretty tastey. A very dry apple jack I cant imagine thatas being pleasant to drink. To distill into a brandy yes but not straight sipping

    This big batch is still working, it was going strong for two weeks and then slowed quickly over the next week, but I’m still getting a bubble every minute or 3 after 4 weeks of fermenting and one transfer.

    I have a small one gallon batch of maple wine going too, and it’s been full on fermenting for a week now.

    I’m getting some wine yeast, maybe champagne too. I found out the yeasts impart different flavors and characteristics to the wine. Lots to learn and experiment with.

    If I had to guess the grape was a good 4 to 6%, based on effect, maybe more. this apple is going to be at least twice that. We’ve tasted it during transfer and it had a bite to it. :) And, that was a week ago.

    I may stop the fermentation by chemical means and sweeten it if needed. But, I’ll probably store some off and let it age a bit too.

    I dont really follow a recipe when I make wine. But this is roughly what I do.
    Grate the carrots (the more you use the more flavour you will have)
    Add some other fruit (raisins are good as are beetroot, turnips, plums ect) Cut them up small.
    Put all the fruit and veg in a large brewing bucket, add water and sugar (the more sugar the sweeter the wine will be, put at least 1 pound per gallon though)
    Add yeast.
    Ferment for one week with fruit and veg in the wine, then strain the wine off.

    The wine will then ferment in the normal way.
    It may take several weeks before it clears.
    This way of brewing will have a very vigourous fermentation and tends to give a good favour to the wine.
    Give it a go. Its cheep to make and gives good results, Dont blame me if it make you go blind though!!!!

    That is my store room Geza, our home canned food, the chest freezer, dried string beans, basil, and cayenne peppers hanging in the background. We are blessed with an overabundance of food this year. I hope others around the world will be so fortunate, but I know some go hungry.
